These are one of me and Matt's favorite cookies of all time. They are so healthy and so good!
Note: I would highly suggest using a KitchenAid mixer or an electric hand mixer to mix all the ingredients together! I found through trial and error that it makes all the difference in the world.
Almond Snickerdoodle Cookies
¼ teaspoon salt
¼ teaspoon baking soda
1 tbsp brown sugar
1 tbsp cinnamon
Preheat oven to 350 degrees F
Mix topping ingredients together into a small bowl and set aside
In a KitchenAid mixer or regular mixing bowl, mix all dry ingredients together
In another bowl, mix all the wet ingredients together
Add wet ingredients in with the dry ingredients
Scoop out a small spoonful of the mixture and ball it in your hand until smooth (should be about 1 inch thick)
Roll the ball into the topping mixture so that all sides are evenly coated
Place on a cookie sheet
Do this until all the mixture is gone and you have 12-14 balls on the cookie sheet
Using a fork, flatten each ball to about 1/4 inch thick. Try to keep it in a circular shape.
Bake for 9 minutes and no longer!
Makes 12-14 cookies!
