Oven Roasted Butternut Squash with Rosemary and Thyme - Vegan
Thanksgiving is right around the corner so I'm excited to be sharing some holiday recipes with you! I just love the holidays!
This butternut squash is so good. It will definitely impress your guests with its simplicity yet amazing flavor. The squash is roasted and seasoned with a lot of good stuff: rosemary, garlic powder, thyme, and more.
I bought my squash whole but you can get pre-cut butternut squash which will save even more time if you have a lot of food to make. Either way, it's a great side for Thanksgiving.
whole butternut squash olive oil
Preheat oven to 400F
Cut squash into half inch cubes
In a large mixing bowl, add squash and drizzle with olive oil
Add in 1 T rosemary, 1 T thyme, 1-2 tsp garlic powder, and some salt and pepper; toss well
Line a baking sheet with foil and spray with a little bit of cooking spray
Add squash to baking sheet and make sure it's an even layer
Bake for 30 minutes!
