I love taking my favorite foods and putting an entirely new spin on them. I've been doing that a lot this year. It makes things fun and exciting again.
Oatmeal is one of my favorite breakfast foods. Not the packets. No way. I actually can't stand the individual packet oatmeal. I used to love them a long time ago, that is, until I started making mine the real way. I make my oatmeal from scratch with almond milk and lots of yummy toppings. Once you start eating it like this you will realize that it takes no time at all and tastes a million times better than the packet oatmeal. Trust me on this. Just 5-10 minutes. That's all. I know you have 5-10 minutes in the morning to make yourself something healthy... :)
Adding chia seeds and frozen berries gives it a gorgeous color and adds extra fiber, omega 3's, and protein. It's a nice way to sneak more nutrients into your diet. I absolutely love this breakfast option! Hope you do too!
Chia Blueberry Breakfast Oatmeal - Vegan
Ingredients 1/2 cup rolled oats 3/4 T chia seeds - I'm a Navitas brand girl! Love it! 1 tsp vanilla pinch of salt 1/4 cup blueberries (I used frozen and it worked great) 1 cup almond milk
Directions In a saucepan, add milk, salt, and chia seeds and bring to a boil. Reduce heat to medium and add oats, vanilla and blueberries. Cook for an additional 3-5 minutes until well blended and soft. Top with slices of banana and your favorite nuts. So freaking good!
