Pumpkin Biscuits Topped with Maple Syrup & Sea Salt



I woke up Sunday morning and was craving something homemade so I easily whipped up these delicious pumpkin biscuits. They were so yummy. All of the ingredients are plant based so this is a very healthy recipe. I topped each biscuit with maple syrup and some sea salt. Check out my YouTube video at the bottom to see how I made them.

Pumpkin is more of a Fall ingredient but I had it on hand and needed to use it. It's one of those great ingredients that is subtle and not too sweet but really adds a nice flavor and consistency.

I used Earth Balance plant based butter and almond milk. When you are baking, I have found that it's best to use plant milks (almond milk, cashew milk, etc.) that don't have added sugars or flavors. Stick with the regular unsweetened versions.

I loved the maple syrup on top! It seriously made these biscuits come to life. I think they are good with butter alone, but the syrup was an amazing addition.

They are absolutely the best hot and right out of the oven!


Hot Pumpkin Biscuits Topped with Maple Syrup & Sea Salt - Plant Based / Vegan / Dairy Free

Ingredients

2 1/4 cup white whole wheat flour

2 Tbsp brown sugar

1 Tbsp baking powder

1 tsp salt

1/2 unsalted butter, cubed (I use Earth Balance plant based butter)

1 cup canned pumpkin puree

3/4 cup almond milk (unsweet)

1 tsp vanilla

a sprinkle of cinnamon and nutmeg

sea salt

1/4 cup maple syrup for brushing on at the end



Preparation

Preheat oven to 450 F

Whisk together flour, brown sugar, baking powder, and salt.

Add in butter and cut in using a pastry cutter or tips of fingers until it resembles course crumbles.

In a separate bowl, whisk together pumpkin, almond milk, vanilla, cinnamon, and nutmeg.

Stir just until a soft dough forms. Put on on a floured surface and pat into a 1 inch thick round.

I used a cup to shape my circles but use any type of round cutter. Repeat with the dough scraps.

Arrange on an ungreased baking sheet and sprinkle with sea salt.

Bake for 14-15 minutes.

Serve warm with maple syrup brushed on top for the best experience!
