This basil pesto pasta is so good! You can eat it warm or cold. It's great either way.
It's also SO easy. I just put all the ingredients in my Ninja blender (you can also use a food processor) and it is ready in minutes. Throw it over some cooked pasta (shoot for whole grain!) and you have a healthy lunch or dinner option.
I used Bragg Nutritional Yeast to give it that cheezy flavor. Seriously this stuff is incredible and is one of my holy grail products. It's a wonderful product and should be in every persons kitchen, especially if you are vegan or lactose intolerant. It gives any dish a cheese flavor without any adding any dairy. The best part is that it has a lot of vitamins and minerals in it so it's extremely nutritious.
Spinach & Basil Pesto Pasta - Dairy Free / Vegan / Plant Based
1 cup fresh basil
1 cup spinach
1/4 cup Bragg Nutritional Yeast
1/4-1/2 cup slivered almonds
1 tsp minced garlic
squeeze of half of a lemon
2 T olive oil
1 tsp salt
dash of pepper
whole grain pasta (I used about 1/2 of the box)
cut up cherry tomatoes
1. Cook pasta according to package instructions. (For this recipe I used whole grain (fiber!) rotini and it was amazing. I only cooked about half of the box as I felt like that was enough. I don't like to have too much cooked pasta in the fridge. It doesn't keep well so it's something I like to make fresh.)
2. In a blender or food processor, blend all of the ingredients up except the cherry tomatoes. NOTE: If it's too thick, just add some almond milk until it thins out a bit more.
3. Place cooked pasta in bowls and add some basil pesto. Stir well. Top it off with a few cut up cherry tomatoes - they are delicious with this! Serve immediately!
Refrigerate any leftovers. It makes a great lunch for the day after too. So healthy!
