Chocolate Mint Mojitos - Vegan

Hi everyone! Summer is almost here! It has been really hot lately here in North Carolina so over the weekend I made some refreshing chocolate mint mojitos to sip on while I relaxed. I'm so excited to share them with you here on the blog because it has been so long since I've put a mixed drink recipe up so I hope you enjoy it!

They really hit the spot and will of course be perfect for enjoying over this Memorial Day weekend coming up! I hope you have a fabulous holiday!

I put my own spin on this basic recipe and used some of my chocolate mint herbs that I'm growing on my patio. They added a delicious touch to this classic cocktail. I love the flavor and combination paired with the rum, bubbly club soda, and cold ice. Soooo refreshing and tangy! Whoo!

I purchased the Bonnie Plants Chocolate Mint Herbs at Lowe's in the garden center for just a few bucks. I planted a small little bundle in early Spring and it has grown a ton. It's huge and taking over my herbs planter. Mint will get crazy so if you purchase it, seriously use it! With full sun, water, occasional miracle grow, and love, these will thrive and produce a lot of mint leaves that you can harvest and enjoy all year long.

Chocolate Mint Mojitos Recipe

(Serves 1)

1 & 1/2 oz (1 full shot glass) White Rum

1/2 lime cut up into wedges

2 Tbsp sugar

10 chocolate mint leaves

1/2 cup club soda

1. Muddle mint leaves, lime wedges, and sugar.

2. Fill the glass with ice cubes.

3. Pour rum over ice and then top it off by adding the club soda.

4. Garnish with lime, straw, and mint sprig.

5. Enjoy right away!
