Pico De Gallo Salsa - Vegan

June is here and it's a busy month for our family! Lots of birthdays: Mr. Truck (June 6th) and Matt and Matt's step-dad Peter (both share birthdays on June 17th). Matt and I also take our yearly trip to Roan mountain to see the Rhododendrons in full bloom so I am excited as heck about all that. It's a great time of year!

Nothing screams summer like juicy fresh tomatoes. I just love them! I am growing large tomatoes and cherry tomatoes on my porch but they aren't quite ready to eat yet (only a few more weeks until harvest) so I have to wait a bit longer. But I grabbed these yummy tomatoes at the grocery store for this recipe and they were perfect.

I love chips and salsa so much, it's literally something I have stock piles of in our pantry because I eat it every single day, so I was excited to get in the kitchen and make a healthy salsa that's homemade and not in a jar.

So, I'm sharing my summer recipe with you for homemade pico de gallo. It's so beautiful and aromatic really looks like summertime in a bowl. It's plant based of course so all of the ingredients are incredibly healthy.

Pico de gallo is different than regular traditional salsa in that pico de gallo is chunkier and all of the ingredients are easily identifiable where as traditional salsa contains more liquid and many of the ingredients are cooked and/or blended even more.

I included my favorite new tortilla chips by Late July - the Chia Quinoa flavor in this recipe and post. They are thin, crispy, and delicious. I LOVE these and I also highly recommend the lime flavored chips too. They make great dipping chips!

Fresh Pico De Gallo Salsa with Chia Quinoa Tortilla Chips Recipe

2 cups fresh tomatoes, diced

1 cup red onion, diced

1/2 cup packed cilantro, chopped (**if you hate cilantro, parsley is a great alternative!**)

1 jalapeno, seeded and diced

Juice of 1 lime


Quinoa Chia Tortilla Chips by Late July, or your favorite tortilla chips

In a medium sized bowl, combine the tomatoes, red onion, cilantro, and jalapeno. Stir until well blended. Top it off with the lime juice and salt. Stir again until evenly mixed. Pour into a serving bowl and garnish with more cilantro or parsley. Serve with your favorite dipping chips!
