Apple & Chia Seed Overnight Oats | Vegan



If you are a homemade oatmeal lover like myself, then you have got to try making overnight oats. It's a healthy and fun alternative to regular oatmeal and tastes incredible. Cold or hot, doesn't matter. Either way is delicious.

Overnight oats are one of the easiest and most delicious breakfasts. I prep it right before bed (it only takes me about 10-12 minutes) and in the morning I just assemble it with some fancy toppings and it's ready in about 5 minutes.

You can put it in a bowl or make it parfait style like I did in these photos.


Overnight oats are made with chia seeds (I really love the Navitas brand) which are a super food and contains omega 3 fatty acids, protein, fiber, iron, and antioxidants. So couple that with the oats and apples and this is a high protein and high fiber breakfast option. Very healthy and nutritious!

Apple & Chia Overnight Oats - Vegan / Dairy Free / Plant Based Recipe

FOR THE OVERNIGHT OATS

1 cup rolled oats

1 1/2 cups unsweetened almond milk (the unsweetened vanilla flavor works great too)

1 tablespoon maple syrup or agave nectar

1 teaspoon cinnamon

1/2 teaspoon vanilla

pinch of sea salt

1 large honeycrisp or granny smith apple grated

3 tablespoons chia seeds

1 tsp allspice

1 tsp nutmeg

1 tsp ginger

TOPPING IDEAS

Raisins

Cinnamon

Copped pecans or walnuts

More diced Granny Smith and/or Honeycrisp apples

Agave nectar or maple syrup drizzle

Coconut whipped cream (I love the SO Delicious brand!)



1. In a medium bowl, combine the oats, milk, maple syrup or agave nectar, cinnamon, vanilla, salt, apple, and chia seeds. Mix well. Season with the allspice, nutmeg, and ginger.

2. Cover and refrigerate overnight. I store mine in an airtight container for maximum freshness. It will thicken nicely and the oats will get super soft.

3. The next morning, portion into bowls or mason jars and top with your favorite toppings. I like mine warmed up in a saucepan but you can also eat it cold as a grab and go!
