These fun pink glam pops are so yum! I call them glam pops because they have dragon fruit in them which is a superfood so it's great for your skin and overall health. And the lovely pink color is so pretty and feminine so I just had to put glam in the title for this recipe. ;)
These pops remind me of those popsicles I used to eat a lot as a kid in the 90's. Those orange bars on a stick with the white cream in the middle. Did you eat those too? Oh man those were delicious. I don't even know what they were called but I loved those so much for the rich creamy center.
The light canned coconut milk is what makes this popsicle super rich and creamy and the maple syrup brings it up a notch by adding some natural sweetness to it. And finally the tangy kiwi in the middle tops this tasty treat off perfectly! Oh I just love it so much! It’s so good!
I like big slices of kiwi for picture purposes but Matt likes his kiwi cut up in little pieces. So you can cut your kiwi anyway you want for this recipe. It’s great both ways.
I absolutely love the flavors here. One of the best things I've had all summer long. Thus, this is one summer recipe you do NOT want to miss. And it's so darn easy. Only takes like 5-10 minutes or so to prep and several hours of freezing and it's ready to eat.

Creamy Pink Kiwi & Dragon Fruit Glam Pops Recipe- Vegan / Dairy Free
(makes about 5 popsicles)
1 can of light coconut milk (I get mine in the Asian section)
1/4 cup maple syrup
1/2 - 1 Tbsp dragon fruit fresh or frozen (also known as pitaya)
2 kiwi, thinly sliced
1. In a high speed blender, add coconut milk, maple syrup, and pitaya. Blend for about 1-2 minutes until well mixed. *I like to add 1/2 Tbsp pitaya to start with to get that light pink color. To make it a darker pink shade, add in more pitaya until your desired shade of pink is reached.
2. Slice kiwi and stick it to the sides of the popsicle molds. Pour the liquid mixture into the molds filling it to the top. Insert the popsicle sticks. I use a 6-mold tray and this recipe makes about 5 popsicles.
3. Freeze for 5-6 hours.
4. Run popsicles under warm water for 30 seconds and gently pull out of molds. Eat right away!
These are so creamy and delicious.
