Blueberry & Cauliflower Lava Smoothie - Vegan


Good morning! I just wanted to share this delicious vitamin and mineral rich smoothie I made this morning for breakfast! It's absolutely scrumptious! Literally one of the best smoothie's I've ever made. So creamy and light.

It's also got a hidden veggie! Wahoo! Cauliflower power! But it's completely undetectable. Cauliflower contains lots of protein (#plantprotein), fiber, calcium, vitamin C & B6, and magnesium. Powerhouse vegetable!

And of course this smoothie has lots and lots of blueberries. Blueberries have one of the highest antioxidant counts of any fruit out there so this is going to be really good for your skin and glow. They are also high in fiber, potassium, vitamin C & B6. Love blueberries!

I feel like my skin got a little more bright after drinking this smoothie this morning! :)


Blueberry & Cauliflower Lava Smoothie Recipe

3/4 cup frozen blueberries

3/4 cup cauliflower

1 large frozen banana

1 cup of plant milk (I used unsweetened regular almond milk)

1 tsp cinnamon

1/2 tsp vanilla extract

1 Tbsp hemp seeds

Throw all of the ingredients in a high speed blender and blend for a good 1-2 minutes so it's all smooth and well mixed.

Pour in a large mason jar until it reaches the top! I love the lava effect. Garnish with extra blueberries, unsweetened coconut flakes, and a pretty straw for sipping!

A perfect morning drink to go with breakfast! ENJOY!!
