Cinnamon Pecan & Banana Milk Shake - Vegan

Pecans are one of those versatile fall ingredients that I just love adding to lots of fall meals. They are delicious in just about everything and provide a rich, nutty, and buttery flavor and texture due to its high content of heart healthy monounsaturated fats.

These cinnamon banana and pecan milk shakes are delicious and make a great late night snack to have if you are watching a movie. I made these for me and Matt the other night for our Netflix movie night and they were so good. And it only takes a few minutes to whip up. So easy! I highly recommend also adding some dairy free whipped cream (I love the SO Delicious brand) to give it some extra sweetness.

Note: This recipe is for 1 milkshake so double the recipe for two people!

The best part of these shakes is the addition of the medjool dates. If you are new to vegan and plant based cooking, medjool dates are one of those items you will use a lot! I keep a stock pile in my pantry because I'm always using them for something. Dates are very healthy (they contain magnesium, calcium, b-6, and more) and act as a great binder for things like homemade pie crusts, cookies, and energy bars. They also have a caramel-like flavor which tastes amazing in so many recipes. The dates in this recipe are blended up a little bit but left slightly chunky to get that caramel like effect. It's just heavenly!

Cinnamon Pecan & Banana Milk Shake- Vegan Fall Treat Recipe

(Serves 1)

1/2 cup pecans, chopped

1/2 cup unsweetened plant milk (I used almond milk)

2 large FROZEN bananas

1/2 tsp vanilla

dash of sea salt

1 tsp cinnamon

3/4 cup of ice cubes

4 medjool dates (pitted)

coconut whipped cream (optional but if you use it, let it sit out for an hour or so to soften)

1. Toast the pecans in a small skilled on medium heat for 3-4 minutes. 2. In a high speed blender, add in the plant milk, bananas, vanilla, salt, and the pecans. Blend until smooth. 3. Add in the ice. Blend again until smooth and the ice is broken down finely. 4. Add in the dates but only blend it just a little bit. You want small chunks as it gives it a nice caramel-like flavor! 5. Pour into a glass and top with some coconut whipped cream, extra cinnamon, and extra pecans.
