A really tasty, healthy, and easy meal to make is a deconstructed burrito bowl or taco bowl. I love these so much you guys! They are so good! They are really quick to put together especially if you've prepped your rice and other grains ahead of time which I do recommend doing to make your meals easier to manage during the week. Sunday night is a great time for meal prepping!

I used spinach as the base of this recipe but you can use any type of green. Don't skip out on the salsa. It's the best part! It gives it a nice amount of moisture and brings it all together once it's mixed up. I also like topping my taco bowls with some vegan shredded cheese and sriracha to give it a little kick. Pair this bowl with some tortilla chips and you have a delicious veggie packed high protein meal ready in minutes. Yum!
