Avocado & Coconut Bacon Breakfast Sandwich on a Toasted Ezekiel Bread English Muffin // Vegan



Good morning friends! Popping in to share one of my recent favorite breakfast sandwiches that I've been loving lately! It's so healthy and easy to put together...and it has bacon! Well, the vegan version of bacon of course! COCONUT BACON!

Last Fall I went to Charlotte Veg Fest which is a very popular vegan festival that travels all across the country and there was a booth selling Coconut Bacon by the vegan company, Phoney Baloney. I had never tried it before but I thought it might be delicious on salads and stuff so I purchased a bag to take home. O.M.G. It is incredible you guys! I could not believe how much it tastes like bacon. It's smokey, salty, crispy and so flavorful! Matt absolutely loves it!


I'm a big big fan. If you like bacon you have to try this. It's a lot healthier and has a ton less fat. And not to mention, cruelty free.

Real bacon might be tasty to most, but it's a processed meat. And we know that in 2015 the WHO listed processed meats (bacon, lunch meat, salami, hot dogs, etc.) as a Level 1 Carcinogen (known to cause cancer) right on up there with tobacco and asbestos. It's not good for you and does not promote health and vitality.

It's no wonder more and more people are jumping on a whole food plant based diet and lifestyle. The Standard American Diet is deadly. A whole food plant based vegan diet is good for our health, the animals, and the environment. It's also more satisfying and nutritious. I love this lifestyle so much!

Avocado & Coconut Bacon Breakfast Sandwich on a Toasted Ezekiel Bread English Muffin

English muffin (I use Ezekiel sprouted grain bread by Follow Your Life)

Avocado

Vegan mayo

Lettuce or Spinach

Tomato, sliced

Red onion, sliced

Coconut bacon

Pepper

Toast the bread, then add some vegan mayo to one side and the smashed avocado and ground pepper to the other side. Top with lettuce, tomato, red onion, and a sprinkle of coconut bacon. I also like to add sriracha at the end too for some extra spice! I love this sandwich with a side of chopped fruit like fresh nectarines or fresh plums. It's a great way to get in more fruit and it adds even more nutrition to your day. A healthy well balanced meal!
