Oven baked fruit crisps are one of my all time favorite desserts! They are so easy to make! I love preparing this recipe in the evening after dinner. It only takes about an hour from start to finish so I can have it ready just in time for movie night. I use the frozen mixed berries bag from Publix. It's a colorful combination of blueberries, raspberries, and blackberries. Baked together, these berries give the most fresh tart like flavor that is incredible with the lightly crispy oat topping.
I love all of the vegan ice creams by SO Delicious. Their frozen goods are some of the best on the market! And they have really been upping their flavors and options lately. They now have decadent moose, fruity flavors, cashew milk ice cream, and even the most delicious frozen chocolate popsicles and sandwich bars you have ever had.
I always pair their classic vanilla coconut milk ice cream with all of my desserts. It is simple and just goes so well as a topping on any sweet treat!
Triple Berry Crisp Topped with Vanilla Ice Cream // Vegan Dessert
2 lbs (4 cups) of frozen mixed berries
1/3 cup maple syrup
2 Tbsp cornstarch
1 tsp vanilla
1 cup old fashioned oats
1/2 cup almond meal
1/3 cup coconut sugar
1/3 cup sliced almonds
1/4 tsp salt
1/4 tsp cinnamon
1/4 cup plain unsweetened coconut yogurt
1/4 cup melted vegan butter
Vegan vanilla ice cream
1. Preheat oven to 350 F
2. Make the berry filling: In a9x9 inch square baking dish add the berry filling ingredients and stir until evenly coated. Set aside.
3. Make the topping: In a medium bowl combine the oats, almond meal, coconut sugar, almonds, salt, and cinnamon. Stir well. Add in the coconut yogurt and vegan butter and stir again until nice and moist.
4. Stir the filling again then add the topping over the filling until it's even spread out. Bake in the oven for 40-45 minutes until it's bubbling and lightly golden brown.
5. When it's done let it sit for 10-15 minutes. Serve with ice cream! I love the vanilla bean by SO Delicious!
