Mango Cashew Coconut Balls - Vegan

I love making recipes that are simple, quick, and nourishing. These mango cashew bites are a fun and tasty little Spring treat.

The cashews and coconut flakes provide the body with healthy fats while the dried mango adds a nice little touch of sweet to balance it perfectly.

Add these bites to your lunch box for a fun and enjoyable snack or grab-and-go when you are heading out the door for a quick energy boost.

Note: Make sure you check the ingredients list when you purchase the dried mango. Many brands contain lots of added refined sugars and processed ingredients. I recommend getting organic dried mango with 'mango' as the only ingredient.

Mango Cashew Bites Recipe / Vegan

makes 8-10 balls

1/2 cup raw cashews

1/2 cup coconut flakes (plus 1-2 Tbsp for rolling at the end)

1/2 cup chopped dried mango

1 tsp maple syrup or dandelion syrup

1/2 tsp vanilla

Pinch of sea salt

1-2 Tbsp plant milk (I used unsweetened almond milk)

In a food processor, add the cashews and coconut flakes and process until crumbly. Add the chopped mango, maple syrup or dandelion syrup, vanilla, and pinch of sea salt and process for a until combined. It should be slightly moist and come together when pinched. Add a splash of plant milk if it seems to dry then process again for a few seconds. Roll the mixture into tablespoon sized balls and then roll the balls into a small bowl of coconut flakes until evenly coated. Eat right away or store in an air tight container!
