This is one of my go-to quick vegan dinners! I make it just about every week.
I really enjoy using the Field Roast sausages for extra protein and texture in this dish. The apple sage is my favorite flavor they offer. It's lightly sweet so it pairs so perfectly with the salty and tangy red pasta sauce.
These sausages are a lot healthier than other vegan meats on the market (they contain no soy lecithin and no pea protein isolate) so it's a really great option if you are looking for a vegan 'meat' with more all natural ingredients.
You can usually find this product in the dairy-free cheese section of your local grocery store and at Whole Foods as well.
Change this recipe up by using penne or rigatoni pasta and sub out the peppers and onions for other veggies you have on hand. You can totally get creative with this. Check out my video below to see how I made it! Enjoy!
Pasta with Veggies & Apple Sage Field Roast Sausage / Vegan Dinner Recipe
1/2 box Bow Tie, Penne, or Rigatoni Pasta
1/2 jar of red pasta sauce
1 cup green bell pepper, chopped
1 cup orange bell pepper, chopped
1 cup red onion, chopped
1. Cook pasta according to package instructions, drain, and set aside.
2. Cook sausages with a little olive oil on medium-high heat for 5-7 minutes until lightly brown. Flipping every couple of minutes. Once finished, slice into 1/2 inch circles and set aside.
3. In a large saute pan, add a little olive oil to the pan and cook down the veggies on medium-heat until softened. Then turn down the heat to medium-low.
4. Add in the cooked pasta, pasta sauce, and sliced sausages to the pan with the veggies. Stir well for a few minutes until everything is evenly coated. You may need to add a little more pasta sauce here. Serve hot in large bowls!
