Hey friends! It's the start of summer and boy has it felt like it here at Lake Norman. It's been almost 100 degrees this past week.
Fresh juicy tomatoes are one of my favorite foods to eat during the summer months. They are great in a Pico De Gallo Salsa with Tortilla chips or cut finely and sprinkled over these delicious tahini and lime chickpea tacos.
This is a really quick and filling recipe to make for lunch or dinner. I make it a lot and it always leaves me very satisfied and well nourished. It's high in protein and good fats as well as fiber. It makes a lot of leftovers so you can pack it in your lunch and take to work the next day. A perfect healthy summertime meal! Check out my video tutorial below to see how I made this recipe!
Tahini & Lime Chickpea Tacos Recipe | Vegan
6 Tbsp runny roasted tahini
1/4 cup lime juice
4 tsp pure maple syrup
2 tsp onion powder
2 tsp garlic powder
2 tsp chili powder
2 tsp cumin
1/2 tsp sea salt
1 (15-oz) can chickpeas, drained and rinsed
Diced red onions
Fresh lime juice
1. In a small bowl whisk together the tahini, lime juice, maple syrup, onion powder, garlic powder, chili powder, cumin, sea salt, and 2 Tablespoons of water.
2. In a separate bowl combine the chickpeas and 1/2 cup of the sauce and mash with a fork until it all comes together. Leftover sauce can be stored in a mason jar for another use.
3. Assemble your taco! Start of with a tortilla then add some lettuce, a few spoonfuls of the chickpea mixture, tomatoes, red onions and finish it off with a splash of fresh lime squeeze!
