One-Pot Mediterranean Pasta with Olives, Sun-dried Tomatoes, & Capers - Vegan

I recently had some family over for lunch and made this one-pot Mediterranean pasta for everyone. It was a hit. I paired it with a simple kale salad and homemade balsamic dressing. A perfect fall or winter evening meal for a family or small gathering ready in about 10 minutes! It is one of those easy recipes where you just dump everything in a pot and walk away and in about 10 minutes you have a hot heavenly meal. It makes a huge pot so it's a great "family size" recipe especially for all you pasta lovers!

♡ One-Pot Mediterranean Pasta with Olives, Sun-dried Tomatoes, & Capers (VEGAN) ♡

(makes 1 large pot that serves about 5-6 people)

16 oz. pasta of choice (I like whole wheat fusilli)

5 & 1/2 cups water

2 & 1/2 cups marinara sauce

1/2 cup kalamata olives

1/3 cup sun-dried tomatoes (I use the dry ones, not the ones in oil)

2 T capers

2 tsp. dried basil

1 tsp. dried oregano

2 tsp. minced garlic (or 1 tsp. garlic powder)

1/4 tsp. pepper

1-2 tsp. salt

1 tsp. red pepper flakes (optional)

2 cups fresh spinach

Add all of the ingredients (except the spinach) into a large pot. Stir well. Bring to a boil and once it starts boiling, reduce the heat to simmer and cook for 10 minutes! Once all of the water has absorbed and it's rich and creamy, add the spinach in and give it one last stir. Garnish with a little bit more red pepper flakes then serve immediately.
