Pecan Pie Bars

These delicious pecan pie bars are amazing. I won’t say healthy but rather rich and decadent. My husband gave them a 10/10. Basically the traditional pecan pie in bar form. A good option to bring to a small party. You'll need a big glass of milk with these super sweet treats!


Pecan Pie Bars

makes 9 bars (vegan, gluten free)


Crust:

2 cups almond flour

2 Tbsp coconut flour

1/4 cup maple syrup

1/3 cup coconut oil, melted

1 tsp vanilla

1/4 tsp salt


Pecan Filling:

1/2 cup coconut oil, melted

1/4 cup maple syrup

2/3 cup coconut sugar

1 tsp vanilla

1/4 tsp salt

1 Tbsp non dairy milk

1 & ½ cups roughly chopped raw pecans

Optional: a few chocolate chips


Directions:

Preheat oven to 350°F. Line an 8x8 inch baking dish with parchment paper (Don’t skip this step as it will be hard to get it out of the pan. Non-stick spray just doesn’t work with this.)


CRUST: In a bowl add the crust ingredients and stir to create a sticky dough. Transfer the dough to the baking dish and press down evenly with your hands. Bake crust for 15-17 minutes until golden brown. Let it cool down completely, about 2 hours.


FILLING: Once the crust has completely cooled down, in a small sauce pan add the coconut oil, maple syrup, coconut sugar, vanilla, and salt. Stir well. Bring mixture to a vigorous boil then immediately take it off the heat. Add in the non-dairy milk and pecans. Stir well!


Add the hot filling to the cool crust and use a spatula to evenly smooth the surface. Optional: add a few chocolate chips on top if you’d like a hint of chocolate!

Bake at 350°F again for 20 minutes. Let cool for 2 hours at least before slicing!
