Pumpkin Spice Latte (Delicious!) - Vegan

Two years ago I created this cozy recipe for PSL and it’s one of my favorite fall and winter drinks. I made it up on a whim and it turned out incredible. We are expecting winter weather this weekend in North Carolina so I'm definitely going to whip this up on Sunday morning as it's snowing. Super excited.

I had a blast styling and photographing these images with one of my new Replica Surfaces boards. I highly recommend this company. The products are top quality. I have a bunch of their photography back drop boards but this one is a new one I just added to my home collection. I really needed something dark and rich. The rust color is so Earthy and lovely.


(makes 1 very large mug)

8 oz. oat milk (or any non-dairy milk)

1/3 cup pumpkin puree

1 & ½ Tbsp maple syrup

1 tsp pumpkin pie spice

1 tsp vanilla

Pinch of sea salt

4 oz. freshly brewed hot coffee

In a small saucepan add the oat milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla, and sea salt. Bring to gentle simmer - you want to get it pretty hot.

Remove the pan from the heat and froth with a frother for about 30-60 seconds until nice and fluffy. Add the mixture to a large mug. Pour in the freshly brewed coffee. Top with some whip cream and a dash of cinnamon!
